You will need:
✔️ 250 ml of milk
✔️ 2 tablespoons of oil
✔️ 1 egg
✔️ 60 g of sugar (add more if you like it sweet)
✔️ a pinch of salt
✔️ Vanilla
✔️ 1 piece of lime zest
✔️ 10 g of baking powder
✔️ 160 g of flour (you can use oat flour)
Preparation:
Beat eggs and sugar well, add milk, salt, vanilla, baking powder and continue to beat with a mixer (or hand whisk), add oil, lime zest and sift flour. As soon as you get a homogeneous dough, you can start baking. (you should get a mass of medium thickness). If the pan is hot, we can bake the pancakes. Choose a non-stick pan. You can oil the pan. Pour the desired amount of batter on the pan, as soon as bubbles appear, turn it over.
For the cream you will need:
✔️ cottage cheese / cream cheese 100 g
✔️ Yogurt 100 g (any fruit you like)
✔️ butter 50 g (room temperature)
Beat the butter well until it turns white, mix the cottage cheese, continue beating and add the yogurt. (If the sweetness is not enough for you, add powdered sugar)
We used chopped pistachios, red currants and blackberries for serving
