Black pasta is quite an interesting choice to decorate your table and surprise your friends.




To prepare the dish you will need:

100 g of semolina
100 g of flour
3 eggs
2-3 g squid ink
Better Fish organic salmon
Dardanelle shrimp
Zucchi Extra virgin oil
Zucchi's Garlic Oil
1 lemon
1 clove of garlic
Parsley
40 ml of cognac

Let's prepare the black paste:

Mix together semolina, flour, 2 whole eggs and 1 yolk, squid ink, knead the pasta dough well and keep it in the refrigerator.

Put the pan on a low temperature, pour Zucchi extra virgin oil.

Finely chop 2 pieces of shrimp with lemon zest and a few sprigs of parsley, put them in a pan, add to the fire and deglaze with cognac.

Cut the salmon into thin slices. Pour lemon juice and sprinkle with salt and pepper. Pour Zucchi garlic oil and let it stand.

Take the dough out of the refrigerator, roll it well to a thin consistency and cut it into paste sizes. Boil in brine for 3 minutes.

Add a little butter to the previously prepared sauce mass and fry the shrimps. Add chopped garlic and pour the watery paste into it. Add 30 ml of lemon juice, garlic olive oil and parsley.

Let's start serving, transfer the pasta to a plate and add the salmon. Garnish with basil and lemon zest.
