Method of preparation

  1. Meringue preparation:
    • Heat the oven to 100 degrees.
    • Beat egg whites with salt and sugar until you get a white and shiny mass.
    • Gradually add the starch and lemon juice, continue to beat until you get a glossy and thick meringue.
    • Place the meringue shapes on a parchment-lined baking sheet (you can use a spoon or a pastry bag), try to make a small indentation in the center so that the cream fits well.
    • Bake at 100 degrees for 2 hours. When the meringue is ready, it should be dry and light.
  2. Cream preparation:
    • Beat the cream until it hardens.
    • Add cream cheese and powdered sugar, continue to beat until you get airy and stiff cream.
  3. Serving and garnishing:
    • Place the prepared bezé on a plate and pour cream on top.
    • Garnish with fruit of your choice, Schwartau berry mix jam and rosemary (optional).
