A sandwich is an easy-to-prepare dish that is often made with meat, but it must be said that a vegetarian sandwich made with vegetables is as delicious as it is beneficial for our health.
To prepare 2 servings you will need:
1 baguette or 2 sandwich breads
5-6 tbsp. olive oil
2 eggplants
50 g of cream cheese
400 g mozzarella (buffalo)
2 tomatoes
10 - 10 g of arugula and fresh basil
salt
Pepper to taste
preparing rules:
We start by frying the eggplant: cut it lengthwise into 1 cm thick pieces and fry it in a heated pan in oil until soft, then brown it on both sides. We add salt and pepper. Transfer it to a kitchen towel.
To assemble the sandwich, cut the baguette lengthwise, spread the cream cheese on the bottom, arrange arugula, eggplant, sliced mozzarella, thinly sliced tomatoes, basil and the second part of the bread. We serve while it is warm.
