6 egg whites
A pinch of salt
300 g of sugar
1 tsp lemon juice

500ml 35-36% cream
Jam and live fruit

Using a food processor or mixer on medium speed, start whipping the protein with a pinch of salt. When you get a fluffy mass, slowly add sugar and increase the speed of the mixer. Finally, add lemon juice and when the sugar dissolves completely, you will get a glossy meringue cream.

Put parchment paper on the baking form, give the desired shape to the meringue cream and bake at 120 degrees for 30 minutes. Then lower the oven and keep it at 100 degrees for 2 1/2 - 3 hours. Wait for the oven to cool down and then take it out on a baking sheet to dry thoroughly.

Whip the cream and place on the meringue. Add jam or fresh fruit as desired.
