Strachatella ice cream

Strachatella is a variety of Italian gelato, consisting of creamy vanilla and chocolate chips.

The method of its preparation is as follows:
Ingredients:
- 2 cups of heavy cream
- 1 glass of milk
- 3/4 cup granulated sugar
- 1 tablespoon of pure vanilla extract
- 85 grams of high-quality dark chocolate (70% cocoa or more)
- A pinch of salt

Preparation instructions:
1. Start by finely chopping the dark chocolate
2. In the bowl of a mixer, combine heavy cream, whole milk, sugar, vanilla extract and a pinch of salt. Stir until the sugar is completely dissolved.
3. Pour the mixture into the mixer and mix. This usually takes about 20-25 minutes, resulting in a soft consistency.
4. While the ice cream is melting, melt the chopped dark chocolate and stir until completely melted.
5. After the stracchatella has reached the desired consistency (it should be thickened but not completely frozen), pour the melted chocolate into the ice cream.
6. Allow the total mass to stand for a few minutes, and then transfer it to an airtight container. Freeze for at least 4 hours.
